Yellowstone Creator opens up new restaurant
This fall at Wynn Las Vegas, the world of television drama meets real-life ranching as Taylor Sheridan, the creator of “Yellowstone” and owner of North Texas’s Four Sixes Ranch, teams up with the property to launch the Four Sixes Ranch Steakhouse. This pop-up restaurant will debut in autumn.
“Yellowstone” and its prequels chronicle the lives of the fictional Dutton family, who own a vast ranch in Montana. Meanwhile, the Four Sixes Ranch, covering 266,000 acres (around 415 square miles), is celebrated for its high-quality beef, exceptional ranch horses, and commitment to sustainable ranching practices.
Four Sixes Ranch has already supplied beef to several Wynn restaurants, but now it takes center stage at the new pop-up.
Featured dishes include Prime beef tartare, prepared tableside with grilled shallots, serrano chiles, mustard, and house-made Texas tortilla chips; a signature 28-ounce cowboy steak branded with the 6666 logo; and a 40-ounce tomahawk steak, sourced from full-breed wagyu cattle, carved tableside.
No Vegas steakhouse is complete without a touch of luxury, and the Four Sixes pop-up delivers a grand caviar presentation.
This towering dish pairs caviar with country-fried chicken tenders, deviled quail eggs, potato tots, kettle chips, brioche toast, chive crema, lemon zest, parsley, and bacon bits.
Mariena Mercer Boarini, the master mixologist at Wynn, is crafting the signature cocktails for the pop-up.
One standout is the Campfire Old Fashioned, made with Buffalo Trace Bourbon, charred sweet corn, and Merchant’s Exchange orange bitters, and smoked tableside on a whiskey barrel stove.
Another highlight is the Honky Tonky, a spicy margarita featuring Casamigos Reposado Tequila, jalapeño, prickly pear, lime, organic agave nectar, and a unique Four Sixes Taylor Sheridan cowboy salt.
The Four Sixes Ranch Steakhouse will take over the Tableau restaurant, operating from 5:30 to 10 p.m. Sundays through Thursdays and 5:30 to 10:30 p.m. on Fridays and Saturdays.
Reservations are now available, with the first seating scheduled for September 16th at wynnlasvegas.com.

Las Vegas Strip Tower Development Plans
Veteran Las Vegas developer Brett Torino and Paul Kanavos, CEO of New York-based Flag Luxury Group, are teaming up to develop two mixed-use towers on the Las Vegas Strip at the former Riviera casino site.
The proposed 600-foot towers will feature a hotel, residential units, restaurants, outdoor dining areas, and a theater.
The project is set to rise on land acquired from the Las Vegas Convention and Visitors Authority (LVCVA), just south of Fontainebleau Las Vegas, which purchased the other half of the 10-acre parcel.
The development will be carried out in two phases. The first phase includes a shopping center with retail outlets, restaurants, and a swimming pool along the Strip-facing section of the property. The second phase will involve the construction of the residential and hotel towers.
To move forward, Torino and Kanavos plan to request a height waiver for the buildings and a reduction in the required number of parking spaces—from 3,027 to 1,577.
They cite LVCVA research indicating that only about half of Las Vegas visitors use personal vehicles, with an increasing number relying on taxis, buses, and other public transportation options.
